Ice cream had its origins in Europe and was introduced to the rest of the world and United States where it developed into an industry. It is believed that ice cream evolved from iced beverages and water ices that were popular in the medieval period. It was around 1920 that the value of ice cream as an essential food was
generally recognized and the product has become immensely popular since then.The development of improved refrigeration and transportation, refrigeration units for home, improved packaging, marketing and high product standards have made ice cream widely available to the consumer. Modern automated operations on a large scale have enabled the industry to cater to any kind of demand, for novelties,stick items, ice cream cakes, pies and other items.

Ice cream and related products are generally classified as frozen desserts which include ice cream, frozen custard, frozen confections, ice milk, sherbets, water ice and mellorine and parevine-type products.
