Defination,Composition,Standards and Factors Affecting Quality of Paneer and Chhana

Paneer and chhana are two important nutritious and wholesome indigenous, dairy products, which occupy a prominent place among traditional milk products and carry lot of market potential. These products are of great value in our diet because of rich source of high quality proteins, fat, minerals and vitamins. Paneer is used as base material for the preparation of a large number of culinary dishes and it is a popular food product at the household level as well as even its use is increasing in organized food chains. It is an excellent match of non-vegetarian food. Chhana, on the other hand, is used as a base for preparation of a variety of sweets viz. rasogulla,sandesh, rasmalai, cham-cham, chhana-murki, etc.
